The idea of writing down these recipes came mainly from our guests, but whenever it was mentioned my reaction was "but anyone can cook, so why does the world need more recipes?".

As the years have gone by, having spoken to many guests about food and cooking, I have come to realise that this could be more than just a few recipes - it could be about the way of life we have chosen, the farm, the vegetable garden, the kitchen and the food we create here, and of course about our guests, to who these recipes are dedicated, because without them, the hotel and restaurant wouldn't exist.
