Basic Bread Recipe

For one bread of 800g or two breads of 400g 
250g White flour 
250 g Integral flour 
1 Tea sp of sugar 
1 Tea sp of salt 
5-7 g of bread yeast 
350 ml of tepid water 
15 ml Of extra virgin olive oil
 
1.   Start by pouring the water in a metal bowl and add the yeast and sugar. 
2.   Add the rest of the ingredients to the water; the flour, the oil  and the salt. 
3.   Mix in the ingredients until the dough doesn't stick to the walls of the bowl. 
4.   At this point you can also add and mix any seeds or nuts, if you want to make all the different types of breads. 
5.   Cover the bowl with a damp cloth and place it in a warm spot to ferment for one hour, make sure there are no cold drafts. The time can vary, the dough should rise twice its size. 
6.   Once the bread has completed the fermentation, grease your hands and your working surface. 
7.   Knead the fermented dough by rolling it from the outside in. 
8.   You can either place the bread in a mould or cut it into separate parts to create different shapes, such as, snail shapes or braid shapes. 
9.   Cover them with a damp cloth and put them again in the warm spot for about an hour. This time varies again, depending on the spot you have chosen, it should raise again twice its size. 
10.   Now bake the bread in the oven for 20 to 30 minutes at 180ºC. 
11.   The bread is ready when you tap it and it sounds hollow.  Remove the bread from the oven and wait for a minute empty the bread from the mold onto a cooling rack.
